This real raw food recipe for Spicy Thai Paste works great with burgers, crackers and salads or would equally work well as a dip.
Ingredients:
- 2/3 cup liquid coconut oil
- 4 heaped tablespoons almond butter
- 2 teaspoons coriander powder
- 1/2 fresh jalapeno pepper, without seeds (or dried chili flakes – use as much or as little as you like)
- 2 tablespoons tamari
- 1 lemon’s juice
- 2/3 cup water
Directions:
- Liquefy the coconut oil by placing it in a small glass jar, and then placing that small glass jar inside a bowl or jug of hot water. If you have a high-speed blender you do not need to liquefy the coconut because the blender will warm it up.
- Add ingredients to blender.
- Blend until smooth. The result will be like a thick cream.
- Poor into a storage container. I find mason jars work really well.
- Place in the fridge for approx 30 minutes (or more) to hardens. Basically, the coconut oil is just returning to a solid state.
Servings:
- Yield is about 2 cups.
Notes:
- This goes well with Thai Burgers.
- As an alternative, you could keep it in it’s liquid state and serve as a salad dressing.
- If you decide to use it as a salad dressing (after the mixture has solidified in the fridge) just use the hot water method described above to make it into a liquid again.
