This real raw food recipe for Spicy Thai Paste works great with burgers, crackers and salads or would equally work well as a dip.

Ingredients:

  • 2/3 cup liquid coconut oil
  • 4 heaped tablespoons almond butter
  • 2 teaspoons coriander powder
  • 1/2 fresh jalapeno pepper, without seeds (or dried chili flakes – use as much or as little as you like)
  • 2 tablespoons tamari
  • 1 lemon’s juice
  • 2/3 cup water

Directions:

  1. Liquefy the coconut oil by placing it in a small glass jar, and then placing that small glass jar inside a bowl or jug of hot water. If you have a high-speed blender you do not need to liquefy the coconut because the blender will warm it up.
  2. Add ingredients to blender.
  3. Blend until smooth. The result will be like a thick cream.
  4. Poor into a storage container. I find mason jars work really well.
  5. Place in the fridge for approx 30 minutes (or more) to hardens. Basically, the coconut oil is just returning to a solid state.

Servings:

  • Yield is about 2 cups.

Notes:

  • This goes well with Thai Burgers.
  • As an alternative, you could keep it in it’s liquid state and serve as a salad dressing.
  • If you decide to use it as a salad dressing (after the mixture has solidified in the fridge) just use the hot water method described above to make it into a liquid again.
